Hearty Barley & Mushroom Stew

🛒 Ingredients (3–4 servings)
For the stew
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
200 g mushrooms (cremini, button, or mixed), sliced
1 carrot, diced
1 celery stalk, diced
½ cup pearl barley, rinsed
4 cups vegetable broth
1 tsp soy sauce or tamari (optional, for umami depth)
1 tsp dried thyme or rosemary
1 bay leaf
Salt and black pepper, to taste

1 tbsp olive oil (optional drizzle)
Fresh parsley, chopped

🍳 Method
Sauté the vegetables
Heat olive oil in a large pot over medium heat.
Add onion, carrot, and celery. Cook 5–6 minutes until softened.
Stir in garlic and mushrooms, and cook another 4–5 minutes until mushrooms release their moisture and begin to brown.
Add barley and simmer
Add the barley, broth, soy sauce (if using), thyme, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer 30–35 minutes, stirring occasionally, until the barley is tender and the stew thickens.
Finish and serve
Remove the bay leaf. Adjust seasoning with salt and pepper.
Ladle into bowls, drizzle with olive oil, and sprinkle with fresh parsley.
