Miso Soup with Greens & Tofu

This light and savory miso soup combines soft tofu, tender greens, and umami-rich broth. It’s simple, soothing, and deeply restorative — a reminder that even the lightest meal can bring warmth, balance, and peace to your day.

🛒 Ingredients (2–3 servings)

For the broth

  • 3 cups water

  • 1 ½ tbsp white or yellow miso paste

  • 1 tsp soy sauce (optional, for deeper flavor)

  • 1 tsp grated ginger (optional)

For the soup

  • 100 g firm tofu, cut into small cubes

  • 1 cup spinach or bok choy, chopped

  • 1 spring onion, finely sliced

  • ½ sheet nori or wakame seaweed, torn into small pieces

To serve

  • Extra sliced spring onion

  • A sprinkle of sesame seeds (optional)

🍳 Method

  1. Prepare the broth

    • In a small pot, heat the water until hot but not boiling.

    • Whisk in miso paste until fully dissolved (avoid boiling once miso is added to preserve its nutrients).

    • Add soy sauce and ginger if using.

  2. Add tofu and greens

    • Gently add tofu cubes and seaweed.

    • Let the soup warm for 2–3 minutes, then add spinach or bok choy.

    • Simmer very gently for another 2 minutes until greens are just wilted.

  3. Serve

    • Ladle into bowls and top with spring onion and sesame seeds.
