Tuscan Kale & Bean Stew
This rustic stew brings together tender white beans, hearty kale, and a rich tomato broth for a meal that feels warm and grounding. Simple and satisfying, it offers a moment of quiet nourishment — a reminder that comfort often comes from wholesome, uncomplicated ingredients.
🛒 Ingredients (2–3 servings)
Base
1 can (400 g) white beans, rinsed and drained
2 cups (60–80 g) chopped kale (curly or Tuscan)
1 cup (200 g) diced tomatoes
1 small onion, chopped
1 small carrot, chopped
2 cloves garlic, minced
2 cups (480 ml) vegetable broth
1 tbsp olive oil
Seasoning
1 tsp dried oregano
½ tsp dried basil
Salt & pepper, to taste
To finish
Fresh parsley
A drizzle of olive oil
Optional: squeeze of lemon or a pinch of chili flakes

🍳 Method
Sauté the aromatics
Heat olive oil in a pot over medium heat.
Add the onion and carrot and cook for 4–5 minutes until softened.
Stir in the garlic and cook for 30 seconds.Build the stew
Add the diced tomatoes, vegetable broth, white beans, oregano, basil, salt, and pepper.
Stir well and bring to a gentle boil.Add the kale
Add the chopped kale and simmer for 8–10 minutes until tender.
If the stew becomes too thick, add an extra splash of broth.Finish and serve
Taste and adjust seasoning.
Ladle into bowls and top with parsley and a drizzle of olive oil.
Add lemon or chili flakes if desired.
