Ginger Carrot Soup

Bright, warming, and gently spicy, this ginger carrot soup blends sweetness and heat into a soothing, velvety bowl. It’s a simple reminder that comfort can come from warm colours, soft textures, and the quiet lift of fresh ginger.

🛒 Ingredients (2–3 servings)

Base

  • 4 medium carrots, peeled and sliced

  • 1 small onion, chopped

  • 1 tbsp grated fresh ginger

  • 2 cups (480 ml) vegetable broth

  • 1 cup (240 ml) coconut milk or milk of choice

  • 1 tbsp olive oil

Seasoning

  • Salt & pepper, to taste

  • Optional: pinch of turmeric or chili flakes

To finish

  • Fresh herbs (parsley or coriander)

  • Optional: extra drizzle of coconut milk or squeeze of lime

Prep: 10 minutes
Cook: 18–20 minutes

🍳 Method

  1. Sauté the aromatics
    Heat olive oil in a pot over medium heat.
    Add the onion and cook for 3–4 minutes until softened.
    Stir in the grated ginger and cook for 30 seconds.

  2. Cook the carrots
    Add the sliced carrots, vegetable broth, salt, pepper, and any optional spices.
    Bring to a gentle boil, then reduce heat and simmer for 12–15 minutes until the carrots are very soft.

  3. Blend until smooth
    Use an immersion blender to blend the soup until silky.
    Alternatively, transfer to a blender in batches.
    Stir in the coconut milk.

  4. Finish and serve
    Taste and adjust seasoning.
    Serve with fresh herbs and an optional drizzle of coconut milk or lime.
