Sweet Corn & Potato Chowder

This gentle chowder brings together sweet corn, tender potatoes, and soft aromatics for a bowl that feels warm and nourishing. Naturally creamy and subtly sweet, it offers a moment of cozy comfort — a reminder that simple ingredients can bring unexpected ease.

🛒 Ingredients (2–3 servings)

Base

  • 1 cup (150 g) sweet corn (fresh, frozen, or canned)

  • 2 medium potatoes, peeled and diced

  • 1 small onion, chopped

  • 1 small celery stalk, chopped

  • 2 cups (480 ml) vegetable broth

  • 1 cup (240 ml) milk or a dairy-free alternative

  • 1 tbsp olive oil

Seasoning

  • ½ tsp dried thyme

  • ¼ tsp smoked paprika (optional)

  • Salt & pepper, to taste

To finish

  • Fresh parsley or chives

  • Optional: squeeze of lemon or a drizzle of cream

🍳 Method

  1. Sauté the aromatics
    Heat olive oil in a pot over medium heat.
    Add the onion and celery and cook for 4–5 minutes until softened.

  2. Build the chowder
    Add the potatoes, corn, vegetable broth, thyme, smoked paprika, salt, and pepper.
    Bring to a gentle boil, then reduce heat and simmer for 12–15 minutes until the potatoes are soft.

  3. Add the creaminess
    Pour in the milk or dairy-free alternative.
    Simmer for another 2–3 minutes.
    For a thicker texture, lightly mash some of the potatoes against the side of the pot.

  4. Finish and serve
    Taste and adjust seasoning.
    Serve topped with fresh herbs, black pepper, or a splash of lemon.
