White Bean & Rosemary Soup
This creamy, herb-scented soup blends hearty white beans with simple aromatics for a bowl that feels both comforting and clean. With its gentle flavours and warming texture, it offers a quiet moment of nourishment — a reminder that simplicity can be deeply soothing.
🛒 Ingredients (2–3 servings)
Base
1 can (400 g) white beans, rinsed and drained
1 small onion, finely chopped
1 medium carrot, diced
1 small celery stalk, diced
2 cloves garlic, minced
2 cups (480 ml) vegetable broth
1 tbsp olive oil
Seasoning
1 tsp dried rosemary or 1 sprig fresh rosemary
½ tsp dried thyme
Salt & pepper, to taste
To finish
A splash of lemon juice
Fresh rosemary or parsley
Optional: drizzle of olive oil or swirl of cream

🍳 Method
Sauté the aromatics
Heat olive oil in a pot over medium heat.
Add the onion, carrot, and celery. Cook for 5–6 minutes until softened.
Stir in the garlic and cook for 30 seconds.Build the soup
Add the white beans, vegetable broth, rosemary, thyme, salt, and pepper.
Bring to a gentle boil, then reduce the heat and simmer for 10 minutes.Blend for creaminess
Use an immersion blender to blend part of the soup directly in the pot — just a few pulses to create a creamy texture while keeping some beans whole.
(Or transfer ⅓ of the soup to a blender and return.)Finish and serve
Taste and adjust seasoning.
Add a splash of lemon juice for brightness.
Top with fresh herbs and a drizzle of olive oil if you like.
