Cauliflower & Potato Curry

This comforting curry blends tender cauliflower and soft potatoes with gentle spices and a rich tomato base. It’s warm, fragrant, and deeply grounding — a simple reminder that calm often arrives in the form of a humble, home-cooked bowl.

🛒 Ingredients (2–3 servings)

Base

  • 2 cups (250 g) cauliflower florets

  • 2 medium potatoes, peeled and diced

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp grated ginger

  • 1 can (400 g) diced tomatoes

  • 1 cup (240 ml) vegetable broth

  • 1 tbsp olive oil

Spices

  • 1 tsp ground turmeric

  • 1 tsp ground cumin

  • 1 tsp garam masala

  • ½ tsp chili powder (optional)

  • Salt & pepper, to taste

To finish

  • Fresh coriander, chopped

  • A squeeze of lemon

  • Optional: spoonful of yogurt or coconut cream

Cook: 25 minutes

🍳 Method

  1. Sauté the aromatics
    Heat olive oil in a medium pot over medium heat.
    Add the chopped onion and cook for 3–4 minutes until soft.
    Stir in the garlic and ginger, cooking for 30 seconds.

  2. Add the spices
    Sprinkle turmeric, cumin, garam masala, and chili powder (if using).
    Toast briefly to enhance their fragrance.

  3. Build the curry
    Add the diced tomatoes, vegetable broth, potatoes, and cauliflower.
    Season with salt and pepper.
    Stir to combine.

  4. Simmer until tender
    Bring to a gentle boil, then cover and reduce heat.
    Cook for 18–20 minutes, stirring occasionally, until the potatoes and cauliflower are soft and the sauce has thickened.

  5. Finish and serve
    Taste and adjust seasoning.
    Add a squeeze of lemon and top with fresh coriander.
    Serve alone or with rice, naan, or quinoa.
