Sweet Potato & Black Bean Tacos
These tacos bring together roasted sweet potatoes, black beans, and bright toppings for a nourishing meal full of color and flavor. Each bite is a small reminder that what we eat can lift our mood, ground our energy, and bring joy to the moment.
🛒 Ingredients (2–3 servings)
For the filling
1 medium sweet potato, peeled and diced (about 2 cups)
1 tbsp olive oil
½ tsp smoked paprika
½ tsp cumin
¼ tsp chili powder (optional)
Salt and pepper, to taste
For the beans
1 can (400 g) black beans, rinsed and drained
1 small clove garlic, minced
1 tsp olive oil
1 tbsp lime juice
Salt and pepper, to taste
To serve
6 small corn or flour tortillas
½ avocado, sliced
Fresh coriander (cilantro), chopped
Lime wedges
Optional: diced tomato, shredded cabbage, or a drizzle of yogurt or tahini sauce

🍳 Method
Roast the sweet potatoes
Preheat oven to 200 °C (400 °F).
Toss sweet potato cubes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper.
Spread on a baking sheet and roast 20–25 minutes, stirring halfway, until tender and lightly crisp on the edges.
Warm the beans
In a small pan, heat olive oil and garlic for 30 seconds.
Add the black beans, lime juice, and a pinch of salt and pepper.
Stir gently for 3–4 minutes until heated through. Slightly mash a few beans for a creamy texture.
Assemble the tacos
Warm tortillas in a dry skillet or directly over a gas flame for a few seconds on each side.
Fill each tortilla with roasted sweet potato and black beans.
Top with avocado, fresh herbs, and any extras you like.
Finish with a squeeze of lime.
