Stuffed Bell Peppers with Lentils & Rice

These stuffed bell peppers are vibrant, satisfying, and full of nourishing plant-based protein. The mix of lentils, rice, and spices creates a wholesome, comforting meal — a reminder that food can be both fuel and a moment of presence.

🛒 Ingredients (4 servings)

For the peppers

  • 4 medium bell peppers (any color), tops sliced off and seeds removed

  • 1 tbsp olive oil

For the filling

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ cup dry green or brown lentils, rinsed

  • ½ cup uncooked brown rice (or quinoa for quicker cooking)

  • 2 cups vegetable broth (plus a little extra if needed)

  • 1 medium carrot, grated

  • ½ cup chopped tomatoes (fresh or canned)

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • Salt and pepper to taste

  • 2 tbsp chopped parsley or cilantro

Optional toppings

  • Drizzle of olive oil or tahini

  • Extra herbs or lemon zest

  • Prep: 15 minutes

  • Cook: 35–40 minutes

🍳 Method

  1. Prepare the peppers

    • Preheat the oven to 200 °C (400 °F).

    • Slice off the tops of the bell peppers and remove seeds.

    • Lightly brush the insides with olive oil and place upright in a baking dish.

  2. Cook the filling

    • Heat olive oil in a saucepan over medium heat. Add onion and cook 4–5 minutes, until translucent.

    • Stir in garlic for 30 seconds.

    • Add lentils, rice, and vegetable broth. Bring to a boil, then reduce to low heat, cover, and simmer 20 minutes.

    • Stir in carrot, tomatoes, paprika, cumin, salt, and pepper. Cook another 5–7 minutes, until most liquid is absorbed and the mixture is tender.

  3. Stuff and bake

    • Spoon the filling into each bell pepper, gently pressing it down.

    • Cover with foil and bake for 20 minutes.

    • Remove foil and bake another 10 minutes, until the peppers are tender and lightly golden on top.

  4. Finish and serve

    • Drizzle with olive oil or tahini and sprinkle with fresh herbs or lemon zest before serving.
