Coconut Chickpea Stew with Greens

Base
1 can (400 g) chickpeas, rinsed and drained
1 can (400 ml) coconut milk (full-fat or light)
1 cup (240 ml) vegetable broth
1 cup (200 g) diced tomatoes (canned or fresh)
2 cups (60–80 g) fresh spinach or chopped kale
1 small onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
Spices
1 tsp ground turmeric
½ tsp paprika
½ tsp cumin
Salt & pepper, to taste
To finish
Fresh coriander or parsley
A squeeze of lime
Optional: chili flakes, extra drizzle of coconut milk

🍳 Method
Sauté the aromatics
Heat olive oil in a pot over medium heat.
Add the chopped onion and cook 3–4 minutes until soft.
Stir in the garlic and cook for 30 seconds.Build the stew
Add turmeric, paprika, and cumin. Stir for a few seconds to release their aroma.
Pour in the coconut milk, vegetable broth, and diced tomatoes.
Mix in the chickpeas, salt, and pepper.Simmer and finish
Let the stew simmer for 10–12 minutes until slightly thickened.
Add the spinach or kale and cook for another 2–3 minutes until wilted.
Taste and adjust seasoning.Serve
