Coconut Chickpea Stew with Greens

This creamy coconut stew brings together tender chickpeas, soft greens, and warm spices in one soothing pot. It’s deeply comforting yet naturally light, offering a moment of calm with every spoonful — a reminder that nourishment can be both simple and soulful

🛒 Ingredients

Base

  • 1 can (400 g) chickpeas, rinsed and drained

  • 1 can (400 ml) coconut milk (full-fat or light)

  • 1 cup (240 ml) vegetable broth

  • 1 cup (200 g) diced tomatoes (canned or fresh)

  • 2 cups (60–80 g) fresh spinach or chopped kale

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

Spices

  • 1 tsp ground turmeric

  • ½ tsp paprika

  • ½ tsp cumin

  • Salt & pepper, to taste

To finish

  • Fresh coriander or parsley

  • A squeeze of lime

  • Optional: chili flakes, extra drizzle of coconut milk

Prep: 10 minutes
Cook: 15–20 minutes

🍳 Method

  1. Sauté the aromatics
    Heat olive oil in a pot over medium heat.
    Add the chopped onion and cook 3–4 minutes until soft.
    Stir in the garlic and cook for 30 seconds.

  2. Build the stew
    Add turmeric, paprika, and cumin. Stir for a few seconds to release their aroma.
    Pour in the coconut milk, vegetable broth, and diced tomatoes.
    Mix in the chickpeas, salt, and pepper.

  3. Simmer and finish
    Let the stew simmer for 10–12 minutes until slightly thickened.
    Add the spinach or kale and cook for another 2–3 minutes until wilted.
    Taste and adjust seasoning.

  4. Serve
    Ladle into bowls and top with fresh herbs, a squeeze of lime, and optional chili flakes or coconut drizzle.
