Dark Chocolate Energy Truffles

🛒 Ingredients (10–12 truffles)

Base

  • 1 cup pitted dates (softened in warm water for 5 minutes if dry)

  • ½ cup nuts (almonds, walnuts, or cashews)

  • 1 tbsp coconut oil or nut butter

  • Pinch of salt

  1. Blend the mixture

    • Add nuts to a food processor and pulse until finely ground.

  2. Shape the truffles

    • Roll the mixture into small bite-sized balls.

    • Roll each truffle in cocoa, coconut, or chopped nuts to coat.

  3. Chill and serve

    • Place the truffles in the fridge for at least 20 minutes to firm up.

    • Store in an airtight container for up to a week.
