Creamy Tomato & Basil Soup

🛒 Ingredients (2–3 servings)
For the soup
1 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 × 400 g (14 oz) can crushed tomatoes (or 4 ripe fresh tomatoes, chopped)
1 cup vegetable broth (add more for thinner soup)
½ cup coconut milk or oat cream (for creaminess)
½ tsp dried basil (or 6–8 fresh basil leaves)
½ tsp salt (adjust to taste)
Black pepper, to taste
To serve
Fresh basil leaves
A drizzle of olive oil or plant-based cream
Optional: whole-grain bread or croutons

🍳 Method
Sauté the aromatics
Heat olive oil in a medium pot over medium heat.
Add onion and cook 4–5 minutes, until translucent.
Stir in garlic and cook for another 30 seconds, just until fragrant.
Add tomatoes and simmer
Stir in crushed tomatoes, broth, basil, salt, and pepper.
Bring to a gentle boil, then reduce heat and simmer uncovered for 10–12 minutes.
Blend until smooth
Use an immersion blender (or transfer carefully to a regular blender) and blend until creamy.
Return to the pot and stir in coconut milk. Heat gently for 2–3 minutes more.
Serve
Pour into bowls, drizzle with olive oil or cream, and garnish with fresh basil.
