Creamy Tomato & Basil Soup

Warm, velvety, and deeply nourishing — this tomato and basil soup is both grounding and uplifting. With its simple ingredients and gentle aroma, it’s a reminder that comfort can come from slowing down and savoring the essentials.

🛒 Ingredients (2–3 servings)

For the soup

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 × 400 g (14 oz) can crushed tomatoes (or 4 ripe fresh tomatoes, chopped)

  • 1 cup vegetable broth (add more for thinner soup)

  • ½ cup coconut milk or oat cream (for creaminess)

  • ½ tsp dried basil (or 6–8 fresh basil leaves)

  • ½ tsp salt (adjust to taste)

  • Black pepper, to taste

To serve

  • Fresh basil leaves

  • A drizzle of olive oil or plant-based cream

  • Optional: whole-grain bread or croutons

  • Cook: 20 minutes

🍳 Method

  1. Sauté the aromatics

    • Heat olive oil in a medium pot over medium heat.

    • Add onion and cook 4–5 minutes, until translucent.

    • Stir in garlic and cook for another 30 seconds, just until fragrant.

  2. Add tomatoes and simmer

    • Stir in crushed tomatoes, broth, basil, salt, and pepper.

    • Bring to a gentle boil, then reduce heat and simmer uncovered for 10–12 minutes.

  3. Blend until smooth

    • Use an immersion blender (or transfer carefully to a regular blender) and blend until creamy.

    • Return to the pot and stir in coconut milk. Heat gently for 2–3 minutes more.

  4. Serve

    • Pour into bowls, drizzle with olive oil or cream, and garnish with fresh basil.
