Chickpea & Spinach Curry

Base

  • 1 tbsp olive oil or coconut oil

  • 1 Γ— 400 g can chickpeas, drained & rinsed (about 240 g drained)

  • 1 Γ— 400 g can chopped tomatoes (or 300 ml passata)

  • 200 ml coconut milk (full-fat for creamier; light works too)

  • 2 large handfuls baby spinach (about 100 g), roughly chopped

  • ½–¾ tsp fine salt, black pepper to taste

  • 1 tsp lemon or lime juice

To finish (optional)

  • Β½ tsp garam masala

  • Fresh coriander (cilantro), chopped

To serve (optional)

  • Steamed basmati rice or warm flatbread

  • Cook: 15–20 minutes

  1. SautΓ© aromatics
    Heat oil in a medium pot over medium heat. Add onion with a pinch of salt and cook 4–5 minutes until translucent. Stir in garlic and ginger for 30 seconds.

  2. Bloom the spices
    Add curry powder (or the DIY blend). Cook 30–45 seconds, stirring, until fragrant.

  3. Build the sauce
    Stir in tomatoes and chickpeas. Simmer 6–8 minutes to thicken slightly.

  4. Make it creamy
    Pour in coconut milk, return to a gentle simmer for 3–4 minutes. Season with Β½ tsp salt and pepper; adjust to taste.

  5. Add the greens
    Fold in spinach until just wilted (1–2 minutes). Finish with lemon/lime juice and (optional) garam masala. Scatter with coriander.

  6. Serve
    Spoon over fluffy basmati rice or with flatbread.
