Chickpea & Spinach Curry
What we eat shapes how we feel and think. This simple, flavorful curry delivers steady energy from chickpeas and iron-rich greens β a gentle, grounding bowl for busy days.
π Ingredients (2β3 servings)
Base
1 tbsp olive oil or coconut oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp fresh grated ginger (or Β½ tsp ground)
Spices (easy option)
2 tsp mild curry powder
or (DIY blend)
1 tsp ground cumin
1 tsp ground coriander
Β½ tsp turmeric
ΒΌ tsp chili flakes (to taste)
Sauce & greens
1 Γ 400 g can chickpeas, drained & rinsed (about 240 g drained)
1 Γ 400 g can chopped tomatoes (or 300 ml passata)
200 ml coconut milk (full-fat for creamier; light works too)
2 large handfuls baby spinach (about 100 g), roughly chopped
Β½βΒΎ tsp fine salt, black pepper to taste
1 tsp lemon or lime juice
To finish (optional)
Β½ tsp garam masala
Fresh coriander (cilantro), chopped
To serve (optional)
Steamed basmati rice or warm flatbread

Heat oil in a medium pot over medium heat. Add onion with a pinch of salt and cook 4β5 minutes until translucent. Stir in garlic and ginger for 30 seconds.Bloom the spices
Add curry powder (or the DIY blend). Cook 30β45 seconds, stirring, until fragrant.Build the sauce
Stir in tomatoes and chickpeas. Simmer 6β8 minutes to thicken slightly.Make it creamy
Pour in coconut milk, return to a gentle simmer for 3β4 minutes. Season with Β½ tsp salt and pepper; adjust to taste.Add the greens
Fold in spinach until just wilted (1β2 minutes). Finish with lemon/lime juice and (optional) garam masala. Scatter with coriander.Serve
Spoon over fluffy basmati rice or with flatbread.

Rice refresher: Rinse 1 cup rice, cook with 1Β½ cups water + pinch of salt, 10β12 minutes covered, rest 5 minutes.
